All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate <br />closure of the food facility. <br />VIOLATIONS AND CORRECTIVE ACTIONS <br /> #7 Hot and Cold Holding Temperatures <br />OBSERVATIONS: The chicken empanadas and eggplant in the warming cabinet are not hot enough at 122 F. Increase the <br />temperature and maintain at 135 F. Correct immediately. <br />The walk in ref is not cold enough at 48 F. Decrease and maintain the temp at 41 F or lower today. <br />CALCODE DESCRIPTION: Potentially hazardous foods shall be held at or below 41/ 45°F or at or above 135°F. (113996, 113998, <br />114037, 114343(a)) <br />This is (Minor - Food) Violation. <br /> #14 Food Contact Surfaces Sanitized or Warewashing Sanitization <br />OBSERVATIONS: The sanitizer level in the 3 compartment sink is not high enough at <50 ppm chlorine. Increase the chlorine <br />concentration to 100 ppm or higher today. Use chlorine test strips to determine the concentration. <br />CALCODE DESCRIPTION: All food contact surfaces of utensils and equipment shall be clean and sanitized. (113984(e), 114097, <br />114099.1, 114099.4, 114099.6, 114101 (b-d), 114105, 114109, 114111, 114113, 114115 (a, b, d), 114117, 114125(b), 114135, 114141) <br />This is (Minor - Food) Violation. <br /> #23 Rodents, Insects or Animals Inside Facility <br />OBSERVATIONS: The rear door of the facility is being left open. Close and keep the door closed to keep unwanted pests out. <br />CALCODE DESCRIPTION: Each food facility shall be kept free of vermin: rodents (rats, mice), cockroaches, flies.( 114259.1, 114259.4, <br />114259.5) <br />This is (Minor - Food) Violation. <br /> #33 Nonfood Contact Surfaces Clean <br />OBSERVATIONS: The condensing fan covers in the walk in ref are dirty. Clean the condensing fan covers by 2 days. <br />CALCODE DESCRIPTION: All nonfood contact surfaces of utensils and equipment shall be clean.
