Provide air gaps at least 1 inch <br />off the floor sinks. Correct before operating. <br />I observe on the ground grease trap underneath the 3 comp sink. As per operator, grease trap has been approved by City of <br />Manteca. <br />Pre Final Inspection. <br />Electric water heater installed is 9KW not meeting the minimum requirement of 11KW. <br />OBSERVATIONS: Base around the mop sink, is not complying with codes. Provide coved base around the mop sink. Correct <br />before operating. <br />Prep sink - 121° Fahrenheit <br />Hand sink -- Rest room - 98° Fahrenheit <br />CALCODE DESCRIPTION: The walls / ceilings shall have durable, smooth, nonabsorbent, light-colored, and washable surfaces. All <br />floor surfaces, other than the customer service areas, shall be approved, smooth, durable and made of nonabsorbent material that is <br />easily cleanable. Approved base coving shall be provided in all areas, except customer service areas and where food is stored in <br />original unopened containers. Food facilities shall be fully enclosed. All food facilities shall be kept clean and in good repair.
