COMPLAINANT <br /> ALLEGES THERE WAS A PILE OF FLOUR AND RAW CHICKEN SITTING ON A COUNTER IN THE KITCHEN <br /> UNCOVERED AND UNATTENDED. FACILITY APPEARS TO HAVE UNSANITARY CONDITIONS. <br /> VIOLATIONS AND CORRECTIVE ACTIONS <br /> Items listed on this report as violations do not meet the requirements set forth in the California Health and Safety Code commencing with section T <br /> 113700.All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediatelv. Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #7 Hot and Cold Holding Temperatures Major <br /> OBSERVATIONS:The walk in cooler is out of service. Tech is currently making repairs. Lots of food that is potentially <br /> hazardous was delivered less than 2 hours ago. Potentially hazardous foods that is still under 49 F or lower shall be moved <br /> into walk in freezer. Potentially hazardous foods that is over 50 F shall be discarded. All potentially hazardous food shall <br /> always be kept at 41 F or lower at all times. <br /> NOTE: Cole slaw and mac and cheese that was in walk in cooler was tossed. <br /> CALCODE DESCRIPTION:Potentially hazardous foods shall be held at or below 41/45°F or at or above 135°F. (113996, 113998, <br /> 114037, 114343(a)) <br /> #23 Rodents, Insects or Animals Inside Facility <br /> OBSERVATIONS:There are rodent droppings at several locations. All evidence shall be removed and surfaces sanitized. <br /> Facility shall be pest free. Monitor daily for activity and continue to clean/sanitize. Seal entry points in order to prevent <br /> rodents from entering. <br /> CALCODE DESCRIPTION:Each food facility shall be kept free of vermin:rodents(rats, mice), cockroaches, flies.( 114259.1, 114259.4, <br /> 114259.5) <br /> #45 Floors, Walls, Ceilings; Clean and Maintained <br /> OBSERVATIONS:Walk in floors lack lots of tiles and floors are muddy. Floors shall be repaired by 2 weeks so that they are <br /> smooth, cleanable, and non absorbent. <br /> CALCODE DESCRIPTION: The walls/ceilings shall have durable, smooth, nonabsorbent, light-colored, and washable surfaces. All floor <br /> surfaces, other than the customer service areas, shall be approved, smooth, durable and made of nonabsorbent material that is easily <br /> cleanable. Approved base coving shall be provided in all areas, except customer service areas and where food is stored in original <br /> unopened containers. Food facilities shall be fully enclosed. All food facilities shall be kept clean and in good repair.
