Clean filters and hood within 2 days. <br /> Walk in cooler and freezer have dust and mold. Clean by today. <br /> CALCODE DESCRIPTION:All nonfood contact surfaces of utensils and equipment shall be clean. (114115(c)) <br /> #40 Proper Use and Storage of Wiping Cloths <br /> OBSERVATIONS:Wiping cloths are observed on prep counters. Provide sanitizers for wiping cloths and maintain in the <br /> sanitizers when not is use. Correct today. <br /> CALCODE DESCRIPTION:Wiping cloths used to wipe service counters,scales or other surfaces that may come into contact with food <br /> shall be used only once unless kept in clean water with sanitizer. She states that there were no <br /> complaints to the facility. She states that she remembers doing the order the complaint is about. She states that the customer <br /> came and order the food and waited for it. <br /> She states the employees have not traveled outside the country,the employees don't work at other food facilities, no illness <br /> reported by the employees within a week of the alleged complaint. <br /> The dishwhasher functions properly, no dishwashing at this time. hand washing facilities provided. <br /> The meats are received frozen.
