Repair, immediately. <br /> The 2 door true cooler at fry station-freezer door does not properly close. Repair door, immediately. <br /> Steel base inside walk in freezer is damaged-edges are curled. Sharp end is dangerous to employees(cut hazard). Base <br /> shall be immediately replaced and sealed to wall. <br /> The 2 door true cooler at cooks line is out of service. It shall be either repaired or removed by 2 weeks. <br /> The following areas in kitchen need daily detail cleaning: <br /> 1. Interior and exterior of microwaves <br /> 2. Surfaces behind equipment(walls at cooks line and behind coffee machine) <br /> 3. Interior/exterior of food warmers <br /> 4. They shall be cleaned on a routine basis to prevent a grease fire. <br /> Filters above fry station are too small.They leave a gap. Gap shall be covered with proper filters in order to trap grease <br /> vapors. <br /> CALCODE DESCRIPTION:Exhaust hoods shall be provided to remove toxic gases,heat,grease, vapors and smoke and be approved by <br /> the local building department. Canopy-type hoods shall extend 6"beyond all cooking equipment.All areas shall have sufficient ventilation <br /> to facilitate proper food storage. Toilet rooms shall be vented to the outside air by a screened openable window,an air shaft,or a <br /> light-switch activated exhaust fan,consistent with local building codes.
