May-05.2009 04;08 PM Jack In the Box 85, -2116 4/6 <br /> Egg Handling Procedure SYSTEM <br /> NOTE: I This procedure cannot be used for any other task and is to be used for agg <br /> handling only. <br /> i <br /> Purpose <br /> The risk of cross-contamination from food handlers cracking eggs and then touching <br /> eauipment and other foods at the grill Is low. However,we must take steps to minimize this <br /> further by using the following procedures. <br /> Preparation <br /> 1. Prepare a 22-qt. bucket of sanitizer solution, (See"Sanitizer Solutions and Test <br /> Strips" in the Risk Management Reference Manual.) <br /> 2. Dlp a clean towel in the bucket and quickly transfer the soaring wet towel to a clean <br /> I i6-size,6"deep, clear food storage pan. Do not wring out excess sanitizer. <br /> NOTE Make sure there is at least l" of visible sanitizes in the bottom of the pan to <br /> ensure towel remains moist. <br /> 3. !_abel the pan with a 2-hour hold time. <br /> 4. Designate this pan for the egg handling procedure by writing"Sanitizer"on the side <br /> of the pan. <br /> Procedure <br /> 1. Place san(tizer pan in a convenient location in the grill area. Do not place on the floor <br /> or above any food or food-contact surface such as the.grill. <br /> 2. (,fter cracking an egg or a series of eggs and before touching anything, place your <br /> fingers into the sanitizer pan, and vigorously rub your fingers against the wet towel to <br /> thoroughly remove any egg residue that may have contacted the skin and fingernails. <br /> 3. Move the towel around In,the pan to roti^:et the towel area you just touched. <br /> 4. Shake excess moisture off your fingers or dry with a paper towel. Do not wipe your <br /> fingers on,your apron. <br /> NOTE:Replace the pan every 2 hours or more frequently if the towel becomes dry and/or <br /> senlflzerbecomes excessively dirty. DO NOTADD FRESH SANITiZER TOA DIRTY PAN <br /> AND TOWEL. <br /> Note: if wearing gloves, hands still need to be washed as often as would be requirad without <br /> glove use. New gloves need to be put on after every handwash (and hands need to be <br /> washed prior to each glove change).
