T have also included the information regarding our egg handling procedure. We <br /> utilize the process described in"Egg Handling Procedure"to add an extra measure of comfort for our <br /> employees and guests. Additionally,our employees wash their hands'as needed according to the list in <br /> "Handwashing and Hand Sanitizing." <br /> Some background information on this procedure is noted below: <br /> • All eggs are thoroughly cooked so there is no runny yolk or egg. <br /> • Our eggs are prepared and served on.at a time, and eggs are neves pooled. <br /> « Salmonella enteritidis is a pathogen of concern and has caused numerous outbreaks in recent <br /> years. However, outbreaks of SE have always been associated with undercooked and/or <br /> pooled eggs. There have been no documented cases of SE resulting from cross contamination. <br /> in spite of these facts,we felt we wanted to take an extra measure of caution. Customer perception of <br /> the fresh whole egg is important to our guests, and they have indicated that a pasteurized liquid egg <br /> product would be unacceptable on our products. <br /> We are confident that a program of thorough and frequent handwashing combined with the added <br /> procedure ofrubbing the fingers with a specifically designated towel will remove any residue left on <br /> the fingers. This procedure is an e,,dxa step we are taking to enhance food safety.
