All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #26 Approved Thawing Methods <br />OBSERVATIONS: 3 bags of raw chicken in trays of standing water on prep table. Thaw by microwave, in refrigerator, or <br />under running water, and clean and sanitize prep table. Corrected. <br />CALCODE DESCRIPTION: Food shall be thawed under refrigeration completely submerged under cold running water of sufficient velocity <br />to flush loose particles in microwave oven during the cooking process. Repair. <br />1D cooler at counter not functional. Repair or remove. <br />Shelves and baseboard/floor of Walk In rusted and porous. Repair and provide non-absorbent and cleanable surface. <br />Cardboard on floor by 3-comp sink being used as matt. Provide approved material that is non-absorbent and cleanable. <br />Observed cardboard removed. <br />CALCODE DESCRIPTION: All utensils and equipment shall be fully operative and in good repair. (114175). All utensils and equipment <br />shall be approved, installed properly, and meet applicable standards. Remove debris and <br />water, and clean. <br />CALCODE DESCRIPTION: The walls / ceilings shall have durable, smooth, nonabsorbent, light-colored, and washable surfaces. All floor <br />surfaces, other than the customer service areas, shall be approved, smooth, durable and made of nonabsorbent material that is easily <br />cleanable. Approved base coving shall be provided in all areas, except customer service areas and where food is stored in original <br />unopened containers. Food facilities shall be fully enclosed. All food facilities shall be kept clean and in good repair.
