The ladies are not wearing hair nets or gloves when touching food and passing the <br /> food out with a very dirty, old towel and serving it to the tables. The plates seemed dirty, or not <br /> washed properly. <br /> The owner is aware of complaints regarding this matter, however, he does not know whether this <br /> complaints is related. <br /> The chip baskets are refilled in lined baskets and stacked on top of each other. Some chips are not <br /> lined so the bottom of the baskets don't touch the chips. Always prevent the baskets from touching <br /> the chips. Correct today. I cannot verify whether the chips are being re-served. The owner states the <br /> chips are not re-served. He states they are discarded. <br /> The employees tie their hair back or use caps. Always use hair restraints. <br /> Currently gloves are not being used. When using gloves the hands must be washed as required <br /> before wearing the glove. The gloves have to be changed when the hands need to be washed. <br /> Follow proper hand washing. <br /> Wiping cloths must be kept inside sanitizers when not in use. Don't leave on the counters. When <br /> dirty, wiping cloths must be replaced with clean ones. <br /> Observed a clean plate with cheese stuck on the inside of the plate. Utensils must be washed, <br /> rinsed and sanitized after use. Make sure all plates are properly washed. <br /> Observed shrimp and thawing at ambient temperature. Follow proper thawing method. Thaw in the <br /> refrigerator, under cold running water, in the microwave or as part of the cooking process.
