FREMONT ST
STOCKTON, CA 95203
Dear Mr. AUTEN
The San Joaquin County Environmental Health Department has reviewed the
plans for the proposed remodel and has the following concerns; the remodel will reduce
the available dry storage space for dry foods, single service items and non-refrigerated
foods. Based on storage taking place in under-cabinet units in conjunction with storage
in the back room, it appears that a total of 110 square feet of storage area would be
available.
It is generally recommended to have the equivalent of 96 linear feet of 18 inch deep
shelving (144 Square Feet). Strong consideration should be given to increase the
available dry storage area in this remodel.
1. The floor surfaces in all areas in which food is prepared, packaged, open food
storage, utensil washing areas, refuse storage, janitorial areas, and all restrooms
and employee change areas shall be smooth and of durable construction and
nonabsorbent material which is easily cleaned. These floor surfaces shall be
coved at the juncture at the floor and wall with a three-eighths (3/8) inch
minimum radius coving and shall extend up the wall at least four (4) inches.
Rubber or vinyl top set base is not permitted in these areas. CURFFL 114150
Note: The flooring needs to be corrected to meet the above conditions through
out the storage and food prep area.
- 1 - ln r.,►
