Thaw in running water, refrigerator or microwave. If food is to <br /> be prepped and temperature control cannot be provided,the limit of prep time is 2 hours before it must be placed back into <br /> temperature control. <br /> CALCODE DESCRIPTION:Food shall be thawed under refrigeration completely submerged under cold running water of sufficient velocity <br /> to flush loose particles in microwave oven during the cooking process. Provide cover in one day for all foods to <br /> protect from contamination. Observed management voluntarily disposed raw/cooked cut/sliced vegetables and a bag of <br /> meat(inards).
