BUGS IN GARLIC SPREAD. <br /> COMPLAINANT HAS OBSERVED OWNER SMOKING A CIGARETTE THEN RETURN TO FOOD PREP WITHOUT <br /> PROPER HAND WASHING." <br /> VIOLATIONS AND CORRECTIVE ACTIONS <br /> Items listed on this report as violations do not meet the requirements set forth in the California Health and Safety Code commencing with section 7; <br /> 113700.All violations must be corrected within specified timeframe. Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #7 Hot and Cold Holding Temperatures Major <br /> OBSERVATIONS:The garlic spread requires refrigeration. Garlic spread temperature is 69F. See photo. Owner states that <br /> he took it out of the walk-in at 9am to allow the product to get soft. If the owner wishes to let the spread get soft,take out a <br /> smaller portion of the spread, and discard after 4 hours. <br /> Inspector did not observe any bugs in the garlic spread this date. <br /> CALCODE DESCRIPTION:Potentially hazardous foods shall be held at or below 41/45°F or at or above 135°F. (113996, 113998, <br /> 114037, 114343(a)) <br /> #4 Employee Eating,Tasting, Drinking or Tobacco Use <br /> OBSERVATIONS:Owner states that he only smokes outdoors. Inspector did not observe the owner smoking at the time of <br /> the inspection. Observed two ash trays(one with cigarette butts) in a box in the facility office. Photo taken. <br /> Immediately discontinue smoking inside the facility. Smoking shall occur outdoors only(20 feet away from any door). <br /> Correct today. <br /> CALCODE DESCRIPTION:No employees shall eat, drink, or smoke in any work area.
