Re-educate employees on the proper procedure for manual <br /> warewashing:wash (hot water and soap), rinse(clean water), sanitizer and cold water(100ppm Cl or 200 ppm Quat),then <br /> air dry. <br /> All dishes, utensils, equipment that has not been preoperly sanitized must be re-done. Correct today. <br /> CALCODE DESCRIPTION:All food contact surfaces of utensils and equipment shall be clean and sanitized.
