Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #7 Hot and Cold Holding Temperatures MAJOR <br /> OBSERVATIONS:Six(6)containers of different meats (chicken, pastor, asada, etc.)on the cook line were at 64F-71 F. No <br /> time control logs observed. Owner stated that the meats were out only for 1 hour. Owner put meats back into the cooler.All <br /> Potentially Hazardous Foods(PHF)must be at 41 F or below or 135F or above when not actively preparing. Correct <br /> immediately. <br /> Cook all PHF to 165F or higher before serving. PHF stored between 41 F- 135F must be thoroughly cooked to 165F within 4 <br /> hours or discarded. <br /> CALCODE DESCRIPTION:Potentially hazardous foods shall be held at or below 41/45°F or at or above 135°F. (113996, 113998, <br /> 114037, 114343(a)) <br /> #23 Rodents, Insects or Animals Inside Facility MAJOR <br /> OBSERVATIONS:Observed 1 live cockroach at the kitchen table (bowls and plates). Observed 1 live cockroach on the <br /> door of the Coldtech freezer.Take necessary steps to eliminate and control cockroach presence. Correct immediately. <br /> Observed a fly strip being used above the hand sink. Defrost frozen foods under refrigeration, in <br /> cold running water while completely submerged, or during the cooking process.
