Quantity and Quality of Domestic Wastewater The estimated sewage flow rates for various uses are available from a number of references. The uses presented below were-guided by the San Joaquin County On-Site Wastewater Disposal Standards (2093), Crites and Tchobanoglous (1998), and EPA (1980). The references indicate that(13 gallon for each employee is typical for an office worker, and 5 gallons is typical for a bar customer; these rates were used for the winery facility (Crites and Tchobanoglous, 1998 The estimated flow values discussed here should not be used for the design and sizing of the septic system. The design and sizing of the septic system should utilize the San Joaquin County Environmental Health On-Site Wastewater Disposal Standards which incorporate peak and surge flow factors. The estimates used in the On-Site Wastewater Disposal Standards may be greater than those discussed here. According to the Site Approval Application, the proposed small winery will be open three days a week with both employees and customers present; the hours will be from 12:00 until 5:00 p.m. Two employees will be present; the employees also live on the Site and, as such, have been excluded from the flow calculation. Up to 20 customers are anticipated per day that the winery is open. Four marketing events and one special event per year are anticipated, with up to 40 guests present at each event. These events will take place in the evening, according to Mr. Durst, and will require four staff members per event. The nitrate as nitrogen (N) concentration of these uses is estimated to be 85-mgiL (Crites and Tchobanoglous, 1998). In addition to the winery uses, the existing four-bedroom dence is consideredlor�the nitrate loading. We estimate a maximum use of 120 gallon, per day per bedroom for the residence. A typical residential concentration of 45 mgfL of nitrate as N is selected (Crites and Tchobanoglous, 1998). It is possible a second dwelling unit could be constructed on the Site in the future. The second dwelling unit can be up to two bedrooms. This potential future use is considered. No contributions from the future vineyard irrigation or soil amendments are considered for the HantzschelFinnemore method.
