Health <br /> OBSERVATIONS AND COMMENTS: <br /> The site visit wasrformed <br /> e <br /> p to determine the scalef <br /> o the manufacturing operation and to meet Mr. <br /> Schenone who has requested a site visit. <br /> We observed approximately 12 employees on the date of the site visit performing various tasks including <br /> bookkeeping and manufacturing tasks. Manufacturing includes melting chocolate blocks for production <br /> of various products including individual candy pieces and chocolate dipped spoons. The manufacturing <br /> area was too small for the present activities so the spoon dipping was performed in a trailer located <br /> adjacent to the main manufacturing area. <br /> Wastewater was not generated in the spoon dipping trailer; however, utensils, cooking equipment, etc. that <br /> requires cleaning is brought to the main manufacturing area for sanitation. Mr. Schenone reported little <br /> need for clean-up activities of the equipment in the spoon dipping area. <br /> Wastewater is generated in the main manufacturing area. Wastewater is generated in sanitation activities <br /> that include cleaning the approximately 50 gallon kettle and associated equipment such as spoons and <br /> other utensils used in preparing the sauces that are placed in bottles. Mr. Schenone reported that the 1 <br /> bottles are delivered to the facility in a clean condition and further cleaning is not necessary, therefore, no <br /> cleaning of the bottles prior to packaging the product is performed. <br /> Mr. Schenone estimated the facility generated wastewater at a rate of approximately 350 gallons per day, <br /> three times per week. <br /> SUMMARY: <br /> Industrial wastewater is generated at the facility but strength and quantity have not been established. <br /> Based on the observations of the manufacturing operation, regulation of the facility with WDRs or the <br /> waiver for tank and haul operations is warranted. <br /> Timothy .
