(Sec. <br /> 113915) <br /> We are constructing our project in two phases. The permit we are <br /> currently submitting for(Phase i) is not for retail but for the now <br /> construction of the metal building to be used for the wholesale <br /> manufacturing and distribution part of our business. <br /> The wholesale manufacturing of food is licensed under the California <br /> Department of Health and Human Services, Food and Drug Branch, In <br /> addition to the state oversight the Federal Food and Drug (FDA) also <br /> license us. We possess both food processing and a cannery licenses <br /> from the State Food and drug and the Federal Food and Drag. Wholesale <br /> food manufacturing does not fall under the supervision of the County. <br /> In Phase 11 of our project we will be remodeling the 100F brick building <br /> into a retail candy shop, espresso bar, and fee cream scoop shop. This <br /> part will be under the supervision of the county and plans will be <br /> submitted as soon as we develop them and prior to our application for <br /> Phase 11 building permit. <br /> The work for Phase fl will be submitted under a separate building permit. <br /> It is our intent to fast track and focus on the new manufacturing building <br /> (Phase 1) before we work on the retail building (Phase 11). We urgently <br /> need to move Into our new manufacturing facility before the start of our <br /> traditional busy season in August—September. However, we do not j <br /> intend to delay Phase 11 at all. We just want to Insure that Phase I goes <br /> as quickly as possible. <br /> Phase 11 of our project has already been included In the calculations and <br /> slung of the septic system. Again it will consist mainly of a 2- <br /> compartment sink for the washing of hands and hand tools.
