March 1, 2003
FOR: Mr. Ernie Schenone, Jr.
Schenone Specialty Foods Company/Chocoholics Divine Desserts
3765 North Wilcox Road, Suite H
Stockton, CA 95215
PROJECT: Proposed Chocoholics Chocolate Manufacturing Facility: PA-0200428 (SA)
18819 East SR Highway 88
Clements, CA 95227
SUBJECT: Information Requested by the Regional Water Quality Control Board
I
This document provides information requested by the Regional Water Quality Control Board,
Central Valley Region in their attached 21 October 2002 correspondence. The informational
headings contained herein corresponds with each paragraph of the Regional Board correspondence.
It is our understanding that this project is classified as 3C, which requires a $400 permit fee. This
fee is attached. It is anticipated the new facility will be operational on July 24, 2003, which will
replace the existing Chocoholics facility on North Wilcox Road, Stockton.
WASTE AND WASTEWATER GENERATION AND DISPOSAL
On-site solid waste generation will be composed of small amounts (less than two gallons per
day) of residual chocolate from the chocolate manufacturing process. Residual chocolate is
I evidenced in the attached photographs, which show small amounts of chocolate after the scraping
of the bulk mixer at the end of each work day. The water used to clean the mixer and cooking
area will be a maximum of 325 gallons per day and will flow into a 1,200 gallon grease trap.
f Effluent from this grease trap will gravity flow to a 1,200 gallon septic tank to be disposed of
through a leachfield system. The grease trap and the entire septic system will be closely
monitored under permit from the San Joaquin County Environmental Health Department, which
will establish pump-out intervals.
Any food products (eggs, whey, powdered milk, powdered chocolate) or by-product (unusable or
residual bulk mixer chocolate) that cannot be used and is ultimately determined to be waste, will
f be handled as a solid waste and disposed of as such. Waste material will be placed and sealed in
plastic bags and/or wax-lined boxes to be disposed of in a dumpster and ultimately to the San
Joaquin County landfill. `
f
P O.
