WASTE DISCHARGE REQUIREMENTS ORDER NO. 5-00-182 -3- <br /> R. LAWSON ENTERPRISES DBA WILDROSE VINEYARDS <br /> SAN JOAQUIN COUNTY <br /> 12. No antiscale compounds or other chemical additives are added to the winery defrost water. <br /> 13. During wine production, various chemicals are used as either an additive, a fining agent, or as a <br /> cleaner/sanitizer. These compounds may include the following: <br /> Wine Additive Wine Fining A ent Cleaner/Sanitizer <br /> Citric Acid Bentonite Chlorinated Trisodium Phosphate <br /> Malic Acid Copper Sulfate <br /> Tartaric Acid Nylon Polymer <br /> Diammonium Phosphate Potassium Bitartrate <br /> Potassium Metabisulfite <br /> Sulfur Dioxide <br /> 14. Pomace and other grape wastes (skins, seeds, pulp, and stems) from the primary fermentation <br /> process in the winery are placed in bins for off-site disposal. Filter press materials are stored <br /> on-site for eventual tilling into vineyard soil. Yeasts and solids generated in the secondary <br /> fermentation process are washed out of the tanks and either settled in the two-stage clarifier or <br /> pumped to the treatment system. <br /> 15. A wastewater pond is located at the north side of the property. It provides approximately 1.5 acres <br /> of surface area. The pond is subdivided into six 0.25-acre areas by berms, and each subarea is <br /> equipped with a wastewater outfall control valve. When these WDRs were prepared, the pond was <br /> being evaluated by the former cherry briner as a source of salinity to the groundwater. These <br /> WDRs prohibit discharge of any water associated with the winery(wastewater, stormwater, or other <br /> liquids) into the pond. <br /> 16. Because monitoring data for the WildRose Winery are not available, typical winery wastewater <br /> data are presented. Compound concentrations in winery wastewater are the highest during the <br /> crush season, typically in the following ranges: <br /> Compound Units Concentration Rangel <br /> pH pH units 2.5 -9.5 <br /> Dissolved Oxygen mg/1 0.5 - 8.5 <br /> Biochemical Oxygen Demand(BOD 5)2 mg/l 500- 12,000 <br /> Chemical Oxygen Demand (COD) mg/1 800- 15,000 <br /> Grease mg/1 5 -30 <br /> Settleable Solids mg/1 25 - 100 <br /> Nonfilterable Residue mg/1 40-800 <br /> Volatile Suspended Solids mg/1 150-700 <br /> Total Dissolved Solids (TDS) mg/1 80-2,900 <br /> Nitrogen mg/1 1 -40 <br /> Nitrate (as Nitrate) mg/1 0.5 -4.8 <br />
