FALL CREEK
REPORT OF WASTE DISCHARGE ENGINEERING.INC.
- of medium-sized wineries in California is included in Table 3.4. Given the high levels of BOD,
this is the waste constituent that generally governs biological treatment plant design.
Table 3.4. Typical Winery Wastewater Characteristics
(Storm, 1997 and Swanson Oswald Associates, 1990)
Waste Parameter Units Concentration
BOD mg/L 3,000—7,000
Suspended Solids mg/L 200-800
Settleable Solids ml/L 5 -20
pH units 3 -5
w Dissolved Oxygen mg/L 0-9
Total Nitrogen mg/L 5 -50
%W Total Phosphorus mg/L 2-8
•. Grease mg/L 5 -40
Sulfate mg/L 20-75
Total Dissolved Solids mg/L 500-1,000
Inorganic (Fixed)
Dissolved Solids mg/L 300-700
Volatile Dissolved Solids mg/L 200-700
During the peak processing period, the wastewater is expected to contain a high concentration of
soluble organic matter, consisting of dissolved sugars and organic acids. This material will
%W contribute to a high biochemical oxygen demand(BOD), however, this waste is readily
%W, biodegradable in a biological treatment system.
%W In general, Total Dissolved Solids (TDS) can be a measurement of inorganic ions in solution.
%W However, in winery process wastewater, a significant fraction of the TDS measured in the
%,. wastewater will consist of dissolved sugars and organic acids, which are also readily
biodegradable in a biological treatment system. Therefore, it is important to consider the
fractions of TDS that are biodegradable (or volatile dissolved solids (VDS)) and fixed(or
inorganic dissolved solids (IDS)) before one can assess the potential long-term impacts from the
`. final disposal of treated wastewater. Recent analysis of other winery facilities in the Central
`,, Valley region indicate that VDS fractions can represent between 40 to 60 percent of the TDS in
v
winery process wastewater.
A variety of chemicals are also used in winemaking for sanitizing tanks and other process
equipment, as well as filtering, clarifying, and preserving wine chemicals (e.g. Tri Sodium
Phosphate, detergents, etc.). Because these materials are typically used in small quantities, most
of these have little affect on the quality of winery wastewater.
`. 3.2.2 Stormwater Quality
As previously described, the Winery uses a combined sewer collection and disposal system for
lkw both process wastewater and stormwater runoff. Roofs, driveways, tanks, and other impervious
%W surfaces cover a significant portion of the facility, and most rainfall enters the combined drainage
`, system and is released to the disposal area.
JESSIE'S GROVE WINERY 10 FEBRUARY 2004
