COMPLAINANT <br />WITNESSED CHICKEN BEING DELIVERED FROM A PRIVATE CAR. COMPLAINANT ATE FRIED CHICKEN AND <br />APPROXIMATELY 1 HOUR LATER BECAME ILL WITH SYMPTOM OF DIARRHEA. <br />DESCRIPTION OF COMPLAINT ALLEGATIONS <br />VIOLATIONS AND CORRECTIVE ACTIONS <br />Items listed on this report as violations do not meet the requirements set forth in the California Health and Safety Code commencing with section 7; <br />113700. All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Facility receives food safety training and no one has been ill. Facility does not <br />receive food from cars. Facility receives raw Tyson chicken breast from MTC once a week. Facility has chicken in the <br />warmer every 4 hours (9am, 1pm,..). Observed chicken being cooked to a proper temperature. Facility discards all the <br />chicken after 4 hours and maintains time on the warmer. Walk-in refrigeration temperature is proper. Sanitizer concentration <br />is proper (200ppm quat) at the warewash sink. All chemicals are properly stored. Hot water is properly supplied. Restrooms <br />and hand wash stations are properly maintained and supplied. Facility uses gloves and utensils when touching chicken. <br />The person in charge is responsible for ensuring that the above mentioned facility is in compliance with all applicable sections of the California Health and <br />Safety Code.
