C&S
Wholesale
Grocers
WAREHOUSE SANITATION PROGRAM
Each storage slot which abuts a perimeter wall is equipped with a pallet stop. Pallet stops are manufactured of'/ inch thick
angle iron with a four inch run and rise. The pallet stop will prevent pallets from being pushed too far into the slot damaging
rodent control traps and also ensure a six inch space between the wall and pallet is maintained.
A trash bag is located at the end of each aisle and is emptied once per day, or when full.
Damaged product found in the aisle is brought to the O,S&D area for proper disposal.
Dock Areas
Dock areas are swept clean at the end of each shift. Dock plates with accessible recesses are swept clean at the end of
each shift. Every other dock door has a trash can. Trash cans are emptied minimum once per day or when full by the
warehouse amenities crew. Spills which occur in the dock area are cleaned up immediately. No food or drink is allowed to
be consumed by employees in the dock area.
Facility Cleaning Matrix
A Facility Cleaning Matrix (slot cleaning map) should be developed as a visual reference to assist sanitarians in sanitation
scheduling and sign off. A diagram of the facility should be developed with slot locations notated on the diagram.
Utilize a color coded protocol to assign the frequency of sanitation, such as green for monthly cleaning, yellow for weekly
cleaning, and red for twice weekly cleaning. Label the slots, aisles, docks and special storage areas with the appropriate
sanitation frequency color code.
This matrix should be posted where it can be seen and notated by appropriate personnel, such as facility communication
boards, break rooms, etc. The board shall be no less than 3 feet long and 2 feet high, and will have the slot cleaning
matrix, the slot cleaning log, the approved cleaning products list, and the frequency matrix posted conspicuously.
Slot Cleaning Log
The slot cleaning log must be completed after slot cleaning has been accomplished. Ensure the appropriate slots have
been documented as being cleaned on the slot cleaning log, with the date cleaned and the sanitarian's initials. Ensure the
slot cleaning log is put back on the slot cleaning board.
..V ,t
Rodent, bird and insect control
Rodent Control
SEP 0 3 ?015
ENVIRONMENTA!
I-CD.tTLJ 1GOA4TAcIT'
Rodent control is conducted by a licensed outside contractor.
