All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Manager showed me the sour cream gun, used at the prep line. Sour <br />cream received in plastic bags, kept in the cooler, then pulled to be loading the gun ( cutting the top edge of the bag, place it <br />in dispenser with dispensing cap then place it in the gun to be used throughout the day at the prep line). As per Manager, this <br />incidence happened by mistake that the dispensing cap was not perfectly tightened. Then the employee loaded the dressing <br />gun and then used it on the salad without seeing the cap dropped on the food. <br />During my visit, I check the sour cream dispenser. It has a tight cap. As per Manager, they are thinking on changing the <br />dressing dispenser gun with something else to avoid this to happen again. <br />Manager dealt with the complainant for compensation. All coolers and cold hold and food stored on the cold hold have temp <br />at 41F or below. <br />The person in charge is responsible for ensuring that the above mentioned facility is in compliance with all applicable sections of the California Health and <br />Safety Code.
