Environmental Health Department <br />Facility Name and Address: NENAS MEXICAN RESTAURANT, 445 W WEBER AVE, STOCKTON 95203 <br />Food Program Official Inspection Report <br /> #14 Food Contact Surfaces Sanitized or Warewashing Sanitization <br />OBSERVATIONS: Observed ware washing employee manually wash utensils and putting them away before they were <br />sanitized. Train all employees how to properly sanitize utensils once they are washed. Ok to place in dish washer once they <br />are washed, so that they go thru the sanitizing step or soak for 30 seconds with 100 ppm in ware washing sink. <br />Bar's dish waher is not sanitizing. Contact tech immediately. Meanwhile inform bar staff to use kitchen's dish washer. <br />Sanitizer level shall be 50 ppm or higher before it is used. <br />CALCODE DESCRIPTION: All food contact surfaces of utensils and equipment shall be clean and sanitized. Tags shall be stored for at least 90 days. Have them available during <br />re-inspection. <br />CALCODE DESCRIPTION: Shell stock shall have complete certification tags and shall be properly stored and displayed. (114039 - <br />114039.5) <br /> #27 Food Protected from Contamination <br />OBSERVATIONS: Several containers with food in walk in cooler are exposed to possible cross contamination. Cover <br />containers. If containers have food that is cooling down, do not cover until 41 F has been reached. <br />CALCODE DESCRIPTION: All food shall be separated and protected from contamination.
