All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #6 Handwashing Facilities Supplied and Accessible MAJOR <br />OBSERVATIONS: Facility is using one compartment of the 2 comp prep sink as hand sink that is lacing paper towels and <br />soap from dispensers. Facility is using temporary soap bottle with pump. Stop using prep sink as hand sink immediately and <br />start today using the washing compartment of 3 comp sink for hand washing. Provide paper towels today and install paper <br />towels and soap dispensers mounted to the wall in 2 weeks. <br />CALCODE DESCRIPTION: Handwashing soap and towels or drying device shall be provided in dispensers dispensers shall be <br />maintained in good repair. (113953.2) Adequate facilities shall be provided for hand washing, food preparation and the washing of <br />utensils and equipment. (113953, 113953.1, 114067(f)) <br /> #23 Rodents, Insects or Animals Inside Facility MAJOR <br />OBSERVATIONS: I observe many live cockroaches at the hood, at the prep sink, at the back washing area and at 3 D True <br />upright cooler. Provide more pest control in 1 week. <br />Facility is using residential toxic pest control powder to control the roaches infestation. Stop this practice immediately and <br />use pest control products safe to be used in restaurant. <br />CALCODE DESCRIPTION: Each food facility shall be kept free of vermin: rodents (rats, mice), cockroaches, flies.( 114259.1, 114259.4, <br />114259.5) <br /> #14 Food Contact Surfaces Sanitized or Warewashing Sanitization <br />OBSERVATIONS: Sanitizer bucket is not set up yet. Set up bucket with chlorine 100 ppm or more or with QUAT 200 ppm <br />or more today. <br />I observe a woody board at the cook line with many cracks and a lot of grease and food debris. Replace wooding board in 1 <br />week and clean and sanitize the surrounding area today. <br />CALCODE DESCRIPTION: All food contact surfaces of utensils and equipment shall be clean and sanitized.
