Clean and sanitize within 2 weeks and maintain <br /> clean. <br /> CALCODE DESCRIPTION:All nonfood contact surfaces of utensils and equipment shall be clean. (114115(c)) <br /> #34 Warewashing Facilites Maintained <br /> OBSERVATIONS:Lacking chlorine test strips. Provide chlorine test strips within 1 week. <br /> CALCODE DESCRIPTION:Food facilities that prepare food shall be equipped with warewashing facilities. Testing equipment and <br /> materials shall be provided to measure the applicable sanitization method. (I14067(f,g), 114099, 114099.3, 114099.5, 114101(a), <br /> 114101.1, 114101.2, 114103, 114107, 114125) <br /> #35 Equipment/Utensils Approved and in Good Repair <br /> OBSERVATIONS:The dishwasher did not produce 50 ppm chlorine. Per manager they have been trying to get it repaired <br /> and are currently using the 3 comp sink for sanitation. Continue using the 3 comp sink for manual sanitation by immersing <br /> the utensils/equipment in 100 ppm minimum chlorine solution for at least 30 seconds. Repair/replace dishwasher within 2 <br /> weeks. <br /> Observed two unsecured CO2 cylinders. Secure CO2 cylinders to a rigid structure today. <br /> Observed debris on vent hood. Clean and sanitize within 2 weeks and maintain clean. <br /> Observed damaged/burned electrical outlet next to burner, on left side of cook line. Replace damaged outlet and repair any <br /> damage to electrical wiring within 2 weeks. <br /> CALCODE DESCRIPTION:All utensils and equipment shall be fully operative and in good repair. (114175).All utensils and equipment <br /> shall be approved,installed properly,and meet applicable standards. Provide an accurate thermometer within 2 <br /> weeks. <br /> CALCODE DESCRIPTION:An accurate easily readable metal probe thermometer suitable for measuring temperature of food shall be <br /> available to the food handler. A thermometer+/-2#F shall be provided for each hot and cold holding unit of potentially hazardous foods <br /> and high temperature warewashing machines. (114157, 114159) <br /> #40 Proper Use and Storage of Wiping Cloths <br /> OBSERVATIONS:The sanitizer tub that the wiping cloths were stored in was 25 ppm chlorine. Store wiping cloths in 100 <br /> ppm chlorine minimum when not being used. Corrected on site. Sanitizer tub was 200 ppm chlorine. <br /> CALCODE DESCRIPTION:Wiping cloths used to wipe service counters,scales or other surfaces that may come into contact with food <br /> shall be used only once unless kept in clean water with sanitizer.
