Provide warm and cold water at this sink with <br /> warm water at 100 F minimum today. <br /> The 3 comp sink and prep sink were 113 F and 112 F respectively. Provide warm and cold water with warm water at 120 F <br /> minimum today. <br /> CALCODE DESCRIPTION:An adequate,protected,pressurized,potable supply of hot water and cold water shall be provided at all times. <br /> (113953(c), 114099.2(b) 114101(a), 114189, 114192, 114192.1, 114195) <br /> #26 Approved Thawing Methods <br /> OBSERVATIONS:Observed tripe thawing in prep sink submerged in water, faucet was not on. Provide cold running water <br /> when thawing food in prep sink. Correct immediately. <br /> CALCODE DESCRIPTION:Food shall be thawed under refrigeration completely submerged under cold running water of sufficient velocity <br /> to flush loose particles in microwave oven during the cooking process. (114018, 114020, 114020.1) <br /> #27 Food Protected from Contamination <br /> OBSERVATIONS:Observed rice being stored in a plastic bag in steam table tray. Store rice in tray or in a food grade bag to <br /> avoid contamination. Correct immediately. <br /> Observed uncovered food items in 4 dr reach-in, 2 dr reach-in w/prep top, everest freezer, and 1 dr reach-in w/prep top. <br /> Cover food items immediately to protect from contamination. <br /> Per owner they use the cups that are to be served to scoop the ice from the ice machine. Use a scoop with a handle to <br /> scoop ice to prevent possible contamination and store scoop on hook or in a cleanable container when not in use. Correct <br /> today. <br /> CALCODE DESCRIPTION:All food shall be separated and protected from contamination.
