Keep potentially hazardous foods at 41 F or below at all times <br /> when cold holding. Corrected on site,the unit was turned down and the temperature went down to 49 F by the end of the <br /> inspection. <br /> CALCODE DESCRIPTION:Potentially hazardous foods shall be held at or below 41/45°F or at or above 135°F. Provide food handler cards for <br /> employee within 30 days of hiring and maintain records on site. <br /> CALCODE DESCRIPTION:All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br /> assigned duties. Observed some dead cockroaches on the floor under prep sink. Per owner currently they are using <br /> sticky traps on the floor for pest control.
