Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #8 Use of Time as a Public Health Control MAJOR <br /> OBSERVATIONS:The chicken patties next to the griddle were 73 F. Per cook the patties and bacon were cooked around <br /> 9:00 and are to be discarded after 1 hour. No time log or documentation was available during the inspection. Provide <br /> documents/records or time log when using time as the public health control and do not exceed 4 hour max hold time. <br /> Corrected on site,food was discarded. Email picture(s)of documentation/time log for food items kept next to griddle within 2 <br /> weeks to dafonskaia@sjgov.org. If picture(s)is not received by 3/25/22 then there will be a re-inspection. <br /> CALCODE DESCRIPTION:When time only,rather than time and temperature is used as a public health control,records and <br /> documentation must be maintained(114000) <br /> #1 Demonstration of Knowledge <br /> OBSERVATIONS:Food manager certificate was not available during the inspection. Email copy of certificate to <br /> dafonskaia@sjgov.org within 2 weeks and maintain copy of certificate on site. <br /> CALCODE DESCRIPTION:All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br /> assigned duties. (113947)Food facilities that prepare,handle or serve non-prepackaged potentially hazardous food,shall have an <br /> employee who has passed an approved food safety certification examination. (113947-113947.1)Any food handler hired after June 1, <br /> 2011 shall obtain a Food Handler Card within 30 days(113948). <br /> #6 Handwashing Facilities Supplied and Accessible <br /> OBSERVATIONS:The paper towel dispenser at the kitchen hand sink was not working. Repair/replace dispenser within 1 <br /> week. <br /> The bar hand sink did not have a paper towel dispenser, observed napkins on bar counter top. Provide wall mounted paper <br /> towel dispenser at this hand sink within 2 weeks. <br /> CALCODE DESCRIPTION:Handwashing soap and towels or drying device shall be provided in dispensers dispensers shall be <br /> maintained in good repair.
