All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR"pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br />#1 Demonstration of Knowledge <br />OBSERVATIONS: Food handler cards are available. Lack of food safety certificate (5 year one). One shall be obtained by <br />60 days from today. <br />CALCODE DESCRIPTION., All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br />assigned duties. (113947) Food facilities that prepare, handle or serve non -prepackaged potentially hazardous food, shall have an <br />employee who has passed an approved food safety certification examination. (113947-113947.1) Any food handler hired after June 1, <br />2011 shall obtain a Food Handler Card within 30 days (113948). <br />#21 Hot and Cold Potable Water Not Available <br />OBSERVATIONS: Hot water was not hot enough at 101 F. It shall be 120 F or higher at all times. <br />CALCODE DESCRIPTION: An adequate, protected, pressurized, potable supply of hot water and cold water shall be provided at all times. <br />(113953(c), 114099.2(b) 114101(a), 114189, 114192, 114192.1, 114195) <br />#39 Thermometers Provided/Accurate/Easily Visible <br />OBSERVATIONS: Lack of probe thermometer. Provide before sales start. <br />CALCODE DESCRIPTION: An accurate easily readable metal probe thermometer suitable for measuring temperature of food shall be <br />available to the food handler. Athermometer +/- 2 #F shall be provided for each hot and cold holding unit of potentially hazardous foods <br />and high temperature warewashing machines. (114157, 114159) <br />#64 Lack of ProperOwner identification <br />OBSERVATIONS: Trailer lacks owner's name, city, state, and zip code. Provide with letters of at least one inch in height by <br />1 week. <br />CALCODE DESCRIPTION: 1. The business name or the name of the operator, city state and ZIP code, and the name of the permittee if <br />different from the business name is not clearly visible on the customer side of the mobile food facility. [§114299(a)] 2. Business or <br />operator name is not at least 3 inches high and address is not one inch high. [§114299(b)] 3. Sign is not in contrasting color with the <br />vehicle exterior. (§114299(b)] 4.
