Clean within 1 week and maintain clean. <br /> The quat sanitizer dispenser was not dispensing any sanitizer,the dispenser was empty.A new sanitizer block was placed <br /> in the dispenser but it was still not providing any sanitizing solution. Per general manager the dishwasher is used for <br /> sanitizing all utensils and the 3 comp sink is mainly used for rinsing. Repair/replace dispenser and continue to not use <br /> sanitizer dispenser until it provides at least 200 ppm quat. <br /> Observed some leakage on counter under tea brewer. Per general manager they have already ordered the replacement part <br /> and are currently regularly cleaning the leakage during operation. Repair machine once replacement part is received and <br /> continue routine cleaning. <br /> Observed ice accumulation in walk-in freezer on ceiling,fan cover,walls, and shelves. Per general manager they were <br /> currently getting the walk-in freezer serviced. Clean within 2 weeks and repair as necessary. <br /> CALCODE DESCRIPTION:All utensils and equipment shall be fully operative and in good repair. (114175).All utensils and equipment <br /> shall be approved,installed properly,and meet applicable standards. Provide an accurate thermometer. <br /> Corrected on site. <br /> CALCODE DESCRIPTION:An accurate easily readable metal probe thermometer suitable for measuring temperature of food shall be <br /> available to the food handler. A thermometer+/-2#F shall be provided for each hot and cold holding unit of potentially hazardous foods <br /> and high temperature warewashing machines. (114157, 114159) <br /> #41 Plumbing Maintained;Approved Back Flow Device <br /> OBSERVATIONS:Observed no air gap between floor sink under dishwasher and discharge pipes. Observed no air gap <br /> between 3 comp sink discharge pipe and floor sink. Provide 1 in. minimum air gap within 1 week. <br /> CALCODE DESCRIPTION:The potable water supply shall be protected with a backflow or back siphonage protection device,as required <br /> by applicable plumbing codes. (114192)All plumbing and plumbing fixtures shall be installed in compliance with local plumbing <br /> ordinances, shall be maintained so as to prevent any contamination,and shall be kept clean,fully operative,and in good repair.
