Per supervisor the food items were placed there at 11 AM when the lunch service <br /> began. Provide 41 F or below at this cooler immediately and do not store potentially hazardous food items inside until the <br /> cooler is 41 F or below. If PHF items will be kept in the prep top before the unit is repaired or at 41 F or below then maintain <br /> time logs/documentation and do not exceed 4 hour max hold time if time will be used as the public health control instead of <br /> cold holding. Corrected on site, items inside the reach-in were relocated to the 2 dr Victory and the PHF items in the prep <br /> top will be discarded at the end of service. <br /> The 2 dr display case at the front counter was 46 F.
