Per employee the chicken was thawed in the morning at room temp and <br /> then left on the counter for about 1 hour.There was a piece of cooked beef on the prep counter next to the chicken that was <br /> 51 F. Went over approved thawing methods with employee. Maintain PHFs at 41 F or below at all times unless actively <br /> being prepped. Corrected on site,the chicken and beef were discarded. <br /> CALCODE DESCRIPTION:Potentially hazardous foods shall be held at or below 41/45°F or at or above 135°F.
