I explained the manual warewash <br />procedure to her (wash, rinse, sanitize, air dry) and provided the sticker for the 3-comp sink. <br />Review procedure with all employees. <br />All dishes, utensils and equipment shall be cleaned and sanitized properly. Provide <br />the source, ingredients, contact information and weight on the labels. Ice baths are being used for <br />potentially hazardous food (PHFs). Repair the unit to maintain PHFs at 41F or below.
