Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #14 Food Contact Surfaces Sanitized or Warewashing Sanitization <br /> OBSERVATIONS:Sanitizing test strips were not available at the facility. Obtain sanitizing test strips to ensure sanitizing <br /> solution has concentration of 100 PPM chlorine for proper sanitation of food preparation and contact surfaces, dishes and <br /> utensils. Correct prior to re-inspection. <br /> CALCODE DESCRIPTION:All food contact surfaces of utensils and equipment shall be clean and sanitized. The hand <br /> washing sink shall be separated from the ware-washing sink or food preparation/storage areas by a metal splash guard, if <br /> separation is less than 24 inches. Splash guard shall be at least 6 inches in height from back edge to front edge. Correct <br /> prior to re-inspection. <br /> CALCODE DESCRIPTION: 1. The mobile food facility sells nonprepackaged food and there is no adequate handwashing sink or if the <br /> hand sink is not separated from the warewashing sink. (§114311) 2. The provided handwashing sink is not at least 9"by 9"and 5"deep <br /> and easily accessible to employees.[§114311(a)] 3. The handwashing sink is not separated from the warewashing sink by a metal <br /> splashguard of adequate size and construction, unless the handwashing sink is separated from the warewashing sink by at least 24". <br /> §114311(b)] 4.
