Mobile food <br /> facilities where non-prepackaged food is cooked, blended, or otherwise prepared shall provide a ware-washing sink with at <br /> least three compartments with two integral metal drainboards. The dimensions of each compartment of the ware-washing <br /> sink shall be at least 12 inches wide, 12 inches long, and 10 inches deep, or large enough to accommodate the cleaning of <br /> the largest utensil. Each drainboard shall be at least the size of one of the sink compartments. The drainboards shall be <br /> installed with at least one-eighth inch per foot slope toward the sink compartment, and fabricated with a minimum of one-half <br /> inch lip or rim to prevent the draining liquid from spilling on the floor. Correct prior to re-inspection. Ensure that the <br /> ware-washing sink has hot and cold water and the hot water temperature reaches a minimum of 120 F. <br /> CALCODE DESCRIPTION: 1. The mobile food facility cooks,blends or otherwise prepares nonprepackaged food and there is no <br /> 3-compartment warewashing sink with two integral drain boards available.[§114313(a)] 2. Where no warewashing sink is required, <br /> equipment and utensils are not washed and sanitized daily at the approved commissary or food facility, or an adequate supply of spare <br /> clean utensils is not provided.[§114313(b)] 3. The compartments of the sink are not at least 12 inches wide, 12 inches long and 10 <br /> inches deep or large enough to accommodate the cleaning of the largest utensil.(1§14313(a)(1)] 4. The drain boards are not at least the <br /> size of one of the sink compartments,are not installed with at least a 1/8 inch per foot slope toward the sink compartment,or are not <br /> constructed with a minimum one-half inch lip or rim to prevent spillage.[1§14313(a)(2)] <br /> #75 Noncompliance with Safety Requirements <br /> OBSERVATIONS:A first aid kit was lacking in the mobile food facility. Obtain first aid kit and maintain on premises at all <br /> times. Correct prior to re-inspection. <br /> CALCODE DESCRIPTION: 1. No first aid kit is available.First aid kit is not convenient. First aid kit is not in an enclosed case. 2.For <br /> mobile food facilities that operate in more than one location during the day, food equipment and utensils are not equipped or stored so as <br /> to prevent movement, spillage,or breakage in the event of a sudden stop, collision or overturn. 3.Light bulbs and tubes are not <br /> completely enclosed with a plastic safety shield or equivalent. 4. There is no easily accessible and properly charged fire extinguisher <br /> available. 5. There is no properly labeled, appropriately sized and located, second exit from an occupiable mobile food facility. 6. <br /> Insulation is lacking from gas fired appliances.[§114323] <br /> OVERALL INSPECTION NOTES AND COMMENTS <br /> FOOD ITEM--LOCATION--TEMP°F--COMMENTS <br /> One door True reach-in cooler--40.00°F <br /> NOTES <br /> Consultation.
