All major violations must be corrected immediately. Non-compliance may warrant immediate closure of the food facility. #21 Hot and Cold Potable Water Not Available Major OBSERVATIONS: Hot water is lacking for the staff restrooms. Provide 100 F minimum within 15 days. ------------------------------------------------------------- Hot water is lacking for the mop sink. Designate one of the existing sinks as a mop sink, or install according to item 41 below, and provide 120 F minimum water temperature within 30 days. Provide proof of correction to cmuro@sjgov.org. Provide a copy of a valid 5 - year food manager's certificate to cmuro@sjgov.org within 21 days. CALCODE DESCRIPTION: All food employees shall have adequate knowledge of and be trained in food safety as it relates to their assigned duties.
