During my inspection, cheese does not show any fermentation. All food items on the hot hold units at the prep line, are at <br />135F and above. Walk in freezer is in good repair and all food items stored in are frozen. <br />The person in charge is responsible for ensuring that the above mentioned facility is in compliance with all applicable sections of the California Health and <br />Safety Code.
