SAN O U I Environmental Health Department <br /> Time In: 12:51 pm <br /> Time Out: 1:03 pm <br /> COMPLAINT INSPECTION REPORT <br /> Name of Facility: SHERMANS 5 BUFFET Date: 12/14/2023 <br /> Address: 5620 N PERSHING AVE, STOCKTON 95207 <br /> Owner/Operator: WEN, BING Telephone: (209)762-2688 <br /> Program Element: 1600- FOOD PROGRAM Complaint#: C00056280 <br /> Responsible Party Contact: <br /> DESCRIPTION OF COMPLAINT ALLEGATIONS <br /> The San Joaquin County Environmental Health Department received the following complaint: <br /> (C)ALLEGES THAT FACILITY TOLD HER THAT THEY SAVE OLD FOOD THAT WASN'T SOLD, RE-HEAT IT THE NEXT <br /> DAY,AND MIX IT WITH FRESH FOOD. <br /> VIOLATIONS AND CORRECTIVE ACTIONS <br /> Items listed on this report as violations do not meet the requirements set forth in the California Health and Safety Code commencing with section 7; <br /> 113700.All violations must be corrected within specified timeframe. Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> OVERALL INSPECTION NOTES AND COMMENTS <br /> FOOD ITEM--LOCATION--TEMP°F--COMMENTS <br /> No Temperature Data Collected <br /> COMMENTS AND OBSERVATIONS <br /> Complaint inspection. No major violations. No re-inspection. <br /> Per person in charge, unsold food is discarded at the end of the night or the employees take it home. Food is never served <br /> the next day. <br /> Reminder that you should cool potentially hazardous food from 135 F to 70 F within 2 hours, and then from 70 F to 41 F within <br /> 4 hours by separating food into shallow containers, separating food into smaller portions, or using an ice bath and stirring <br /> frequently.
