Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #21 Hot and Cold Potable Water Not Available MAJOR <br /> OBSERVATIONS:Hot water was not available at facility,the water heater was not working. Provide hot water between <br /> 100-108 F at the nonadjustable hand sinks for hand washing and hot water at 120 F minimum at the 3 comp, prep, and mop <br /> sinks. Corrected temporarily, a service tech was called out to service unit and stated that the water heater will be fixed by <br /> tomorrow and an instant hot water heater will be installed at the subway front counter hand sink today for hand washing until <br /> the water heater for the facility is fixed. <br /> The detergent solution at the 3 comp sink was 70,there were some utensils submerged in the solution but no active <br /> washing was being done. Hot water was currently not available at facility. Provide warm water between 100-110 F detergent <br /> solution at 3 comp sink when warewashing. Per manager the water will be temporarily heated in microwave when washing <br /> utensils until the water heater is fixed. <br /> CALCODE DESCRIPTION:An adequate,protected,pressurized,potable supply of hot water and cold water shall be provided at all times. <br /> (113953(c), 114099.2(b) 114101(a), 114189, 114192, 114192.1, 114195) <br /> #1 Demonstration of Knowledge <br /> OBSERVATIONS:Observed 1 expired food handler card for employee. Provide current food handler card within 2 weeks. <br /> CALCODE DESCRIPTION:All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br /> assigned duties.
