All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #7 Hot and Cold Holding Temperatures MAJOR <br />OBSERVATIONS: The milk at the coffee service area by the Bakery is 53F. Per employee, it was put out 2 hours ago. <br />If time as a temperature control is used, documentation must be maintained (log, sticker, timer). <br />CALCODE DESCRIPTION: Potentially hazardous foods shall be held at or below 41/ 45°F or at or above 135°F. (113996, 113998, <br />114037, 114343(a)) <br /> #23 Rodents, Insects or Animals Inside Facility <br />OBSERVATIONS: Observed one adult German cockroach on the wall in the kitchen. <br />It was killed. <br />Per Store Director, it probably came in on a cardboard box. Facility is serviced routinely by Matrix Pest Control. <br />No evidence of cockroaches anywhere else in the facility. <br />CALCODE DESCRIPTION: Each food facility shall be kept free of vermin: rodents (rats, mice), cockroaches, flies.( 114259.1, 114259.4, <br />114259.5) <br /> #35 Equipment/Utensils Approved and in Good Repair <br />OBSERVATIONS: The condenser fan housing in the Bakery walk-in cooler is leaking water. Parts have been ordered. <br />Repair the housing when parts are received. <br />The dairy walk-in product shelves have mildew build-up on the service side (@ walk-in cooler doors on the back side of the <br />shelving). A portion of the shelves have been cleaned. Complete cleaning and sanitizing the remaining shelving by 1 week. <br />CALCODE DESCRIPTION: All utensils and equipment shall be fully operative and in good repair. (114175).
