All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #7 Hot and Cold Holding Temperatures MAJOR <br />OBSERVATIONS: Major: Observed open case refrigerator near register had a temperature of 54 F. Per employee, the <br />perishable items had been recently moved into the refrigerator from the walk in cooler since they turn off the cooler at night <br />and leave non perishable items and store the perishable items in walk in cooler. Items were removed and put back into walk <br />in cooler. Instructed to wait for unit to reach 41 F or below before putting perishable items. Corrected on site. Provide 41 F or <br />below for this unit before storing any perishable food items. <br />Minor: Observed the open case refrigerator in the produce area holding cut papaya at 46 F. Adjust unit to provide a <br />temperature 41 F or below. Correct today. <br />CALCODE DESCRIPTION: Potentially hazardous foods shall be held at or below 41/ 45°F or at or above 135°F. (113996, 113998, <br />114037, 114343(a)) <br /> #27 Food Protected from Contamination <br />OBSERVATIONS: Observed food containers without a lid or covering in walk in cooler. Cover food containers with a lid, foil, <br />or plastic wrap to protect from contamination. Correct today. <br />CALCODE DESCRIPTION: All food shall be separated and protected from contamination. (113984 (a, b, c, d, f), 113986, 114060, <br />114067(a, d, e, j), 114069(a, b), 114077, 114089.1 (c), 114143 (c)) <br /> #32 Food Properly Labeled and Honestly Presented <br />OBSERVATIONS: Observed individual bagged beans without individual labels. Label each package of beans with the <br />following information: <br />1. Common name of the food. <br />2. Quantity <br />3. Name and Address of Business (doing the prepackaging). <br />Correct within seven days. <br />CALCODE DESCRIPTION: Any food is misbranded if its labeling is false or misleading, if it is offered for sale under the name of another <br />food, or if it is an imitation of another food for which a definition and standard of identity has been established by regulation. Food facilities <br />with 19 or more chains in the state shall disclose nutritional information.
