As per operator, he is not aware of the complaint. No reported illness by employees. No employees working for other food <br /> facilities, day care or health care facilities. Staff consuming food eaten by complainant. No out of the country traveling by <br /> employees.Valid food manager certificate and food handler cards provided. Taco Salad with Carnitas is composed of deeply <br /> fried tortilla shell stuffed with fried beans, slowly cooked pork, lettuce, cheese,freshly made guac, chopped tomatoes and <br /> sour cream. Raw pork is received at 41 F from approved source, stored in the bottom shelf of walk in cooler. Preparation of <br /> the meat is followed by slow cooking. Cooked meat is held on griddle at 158F to order and the rest will be cooled at 41 F in <br /> walk in cooler(41 F during my inspection). Beans cooked to be held on steam table at 164F. Produce received and held in <br /> walk in cooler to be prepared (onion,tomatoes, lettuce)and held on the 3 D cold hold unit at prep Iine.Chopped produce on <br /> the cold hold unit, are at 41 F or below. Dish washer has chlorine at 50 ppm.All 3 comp sink, prep sink have hot water at 120F <br /> or more. Hand sink is accessible and fully supplied with soap and paper towels from dispensers. Cooking area has 2 sanitizer <br /> buckets set up with chlorine 200 ppm. Chlorine strips are available on site. Rest rooms are operational and fully supplied with <br /> soap and paper towels. Raw meat is stored in bottom shelf of the walk in cooler and ready to eat/cooked food are stored on <br /> top shelf away from any potential contamination. Chemicals are stored in separate room away from food prep area and clean <br /> utensils storage area.
