Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate <br /> closure of the food facilitv. <br /> #14 Food Contact Surfaces Sanitized or Warewashing Sanitization MAJOR <br /> OBSERVATIONS:At the time of the inspection,the dish machine display read "Energy Saver."The machine was run twice <br /> and did not reach the proper temperature level of 160F (minimum).The machine reached 160F at the third cycle. <br /> Ensure the dish machine is functioning properly daily. If the machine does not reach 160F, all dishes, utensils, equipment, etc. <br /> shall be washed manually at the 3-comp sink using the wash-rinse-sanitize-air dry procedure. <br /> Per Shift Supervisor,the dish machine was serviced yesterday, but a new work order will be submitted. <br /> CALCODE DESCRIPTION:All food contact surfaces of utensils and equipment shall be clean and sanitized.
