(REPEAT) <br /> CALCODE DESCRIPTION:When time only, rather than time and temperature is used as a public health control, records and <br /> documentation must be maintained(114000) <br /> This is(Major)Violation. <br /> #7 Hot and Cold Holding Temperatures <br /> OBSERVATIONS:The open produce cooler was observed at 43 F and the three door display cooler was observed at 43 F. <br /> Adjust units so that they maintain food at 41 F or lower. Correct today. <br /> CALCODE DESCRIPTION:Potentially hazardous foods shall be held at or below 41/45°F or at or above 135°F. Front doors were open for the duration of the inspection. Fly <br /> paper was observed hanging over open food at the front counter and in the kitchen area. Keep doors closed to prevent the <br /> entrance of flies and other vermin. Do not use fly paper over the top of food to prevent contamination of food items. Correct <br /> today.
