Remove table for full accessibility of the 3 comp sink and proper manual utensils washing. Correct today. I observe dirty utensils and cleaning tools in the sanitizing compartment and air dry drain board of 3 comp sink. Remove items, clean, sanitize the sink compartment and drain board. Correct today. CALCODE DESCRIPTION: Food facilities that prepare food shall be equipped with warewashing facilities. Testing equipment and materials shall be provided to measure the applicable sanitization method. Fix leakage in 1 week. Pipe, draining the 3 comp sink in underneath floor sink, is lacking air gap. Provide air gap at least 1 inch off the floor sink . Correct in 1 week. CALCODE DESCRIPTION: The potable water supply shall be protected with a backflow or back siphonage protection device, as required by applicable plumbing codes.
