<br />OBSERVATIONS: A food manager’s certificate was not available during the inspection . Provide a copy of a valid 5 - year food
<br />manager's certificate to lbaker@sjgov.org within 60 days of permit issuance.
<br />All other employees should obtain 3 - year Food Handler Card within 30 days from date of hire.
<br />CALCODE DESCRIPTION: All food employees shall have adequate knowledge of and be trained in food safety as it relates to their
<br />assigned duties. (113947) Food facilities that prepare, handle or serve non-prepackaged potentially hazardous food, shall have an
<br />employee who has passed an approved food safety certification examination. (113947-113947.1) Any food handler hired after June 1,
<br />2011 shall obtain a Food Handler Card within 30 days (113948).

<br />OBSERVATIONS: Observed build-up on the deflector plate of the ice machine. Clean and sanitize to protect food from
<br />contamination. Correct prior to operation.

<br />OBSERVATIONS: Sanitizer test strips were not available at the facility and the container of sanitizer for the dishwasher was
<br />empty. Obtain sanitizer test strips and refill sanitizer for dishwasher to ensure proper sanitizing solution levels. Correct prior to
<br />operation.
<br />CALCODE DESCRIPTION: Food facilities that prepare food shall be equipped with warewashing facilities. Testing equipment and
<br />materials shall be provided to measure the applicable sanitization method. (114067(f,g), 114099, 114099.3, 114099.5, 114101(a),

<br />#39 Thermometers Provided/Accurate/Easily Visible
<br />OBSERVATIONS: A probe thermometer was lacking . Provide a probe thermometer prior to operation.
<br />CALCODE DESCRIPTION: An accurate easily readable metal probe thermometer suitable for measuring temperature of food shall be
<br />available to the food handler. A thermometer +/- 2 #F shall be provided for each hot and cold holding unit of potentially hazardous foods
<br />and high temperature warewashing machines. (114157, 114159)
<br />#41 Plumbing Maintained; Approved Back Flow Device
<br />OBSERVATIONS: The ice machine and soda dispenser are lacking an air gap. Provide a gap distance of one inch minimum
<br />between the end of the waste pipes and the top of the floor sink. Correct prior to operation.
<br />CALCODE DESCRIPTION: The potable water supply shall be protected with a backflow or back siphonage protection device, as
<br />required by applicable plumbing codes. (114192) All plumbing and plumbing fixtures shall be installed in compliance with local
<br />plumbing ordinances, shall be maintained so as to prevent any contamination, and shall be kept clean, fully operative, and in good
<br />repair. Any hose used for conveying potable water shall be of approved materials, labeled, properly stored, and used for no other
