Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #14 Food Contact Surfaces Sanitized or Warewashing Sanitization MAJOR <br /> OBSERVATIONS:The dish machine is not dispensing any sanitizer. Ran the machine twice(0 ppm Cl both times), <br /> changed out the sanitizer bucket(empty at time of arrival), primed the sanitizer line and ran the machine 2 more times <br /> (Oppm Cl). <br /> Do not use the dish machine until it has been serviced and proper function is restored (sanitizer shall be 50 ppm Cl at the <br /> final rinse). <br /> All dishes, utensils, and equipment shall be washed-rinsed-sanitized and air dried at the 3 comp sink until the dish machine <br /> is repaired. <br /> Spoke with the owner of ChemTech on the phone. He stated that the tech is on his way and will be on site in about 45 <br /> minutes. <br /> CALCODE DESCRIPTION:All food contact surfaces of utensils and equipment shall be clean and sanitized.
