During wine production, various chemicals are used as either an additive, a fining agent, or as a <br /> clean er/san itizer. These compounds may include the following: <br /> Wine Additive Wine Fining gent Cleaner/sanitizer ` <br /> Citric Acid Bentonite Caustic Soda <br /> Fumaric Acid Carbon Chlorine <br /> Malic Acid Copper Sulfate Chlorinated Trisodium Phosphate <br /> Tartaric Acid Nylon Polymer Caustic/Wetting Agent <br /> Diammonium Phosphate Potassium Bitartrate <br /> Potassium Metabisulfite <br /> 7. Winery wastewaters are screened at the drains and at the sump prior to discharge to the unlined <br /> pond. The sump is located at the north end of the unlined pond. Screenings will be collected for <br /> off-site disposal. <br /> 8. The winery will expand its operations in five phases over a period of eight years. Discharges are <br /> planned to increase from the currant rate of approximately 3,000 gallons per day (gpd) to a <br /> maximum of 150,000 gpd upon full expansion of the winery, corresponding to a 20,000 ton crush. <br /> Maximum seasonal flows generally occur from August to October during the grape crushing <br /> season. Flows will be metered at the process wastewater/stormwater sump. <br /> 9. Winery wastewater is discharged to an unlined pond for evaporation and percolation. The <br /> dimensions of the pond are approximately 600 by 150 feet by 14 feet in depth, with a holding <br /> capacity of 660,000 cubic feet. Approximately five feet of the pond is below grade. Solids that <br /> accumulate on the pond bottom will routinely be scraped for removal to an agricultural user. <br />
