<br /> Ingredients: Split Bengal Gram flour, Fine Semolina, Food Color (orange), Oil for deep frying,
<br /> Water, Salt, Sugar, Green Cardamoms, Rose Essence, Pistachios, Dry Roasted Melon Seeds,
<br /> �( Clarified Butter as needed
<br /> Method: Making Gram Flour Pearls: In a mixing bowl add Split Bengal Gram flour,fine semolina,
<br /> orange food color and a tiny pinch of salt. Mix well.Add water little by little and mix the batter well
<br /> without any lumps. Heat oil for frying. Once it is hot, set it on medium flame. Take a ladle that has
<br /> the smallest holes. Place it directly above the oil for frying at around 1/2 feet distance. Pour the
<br /> batter all over the ladle and gently tap the rod with your hand. This ensures that the pearls fall into
<br /> the oil. Let them cook for a minute or so. Take them off the oil and keep in a container. Repeat
<br /> this with the rest of the batter.
<br /> For the sugar syrup: To make the sugar syrup, mix sugar with water and let it come to a boil.
<br /> Add crushed cardamoms and rose essence and continue to cook the syrup on medium flame.
<br /> When the sugar syrup reaches one string consistency it is ready.
<br /> Final Making:Add prepared pearls to the sugar syrup. Next, add chopped and roasted pistachios
<br /> along with dry roasted melon seeds. Mix well and cook this for 2-3 mins. Remove from heat and
<br /> keep it covered for 20-30 mins.
<br /> To make the balls, grease your palm with clarified butter and take a palm full of sugar soaked
<br /> pearls and give them a shape of a sphere. Repeat this with the rest of the mixture.

<br /> J3.5 Edible Gum Fu a Balls with JaqqerV
<br /> Ingredients Aftery, Dry coconut, dry dates (seedless) powder, edible gum, Clarified Butter,
<br /> Cashew, Almonds, Raisins, Po water, Cardamom Powder, Nutmeg powder
<br /> Method: In a pan heat clarified butter and roast edible gum in batches. Crush the edible gum
<br /> using your hand. Roast dry fruits, dry coconut and poppy seeds. Roast dry dates powder with 2
<br /> tbsp clarified butter on low flame. Transfer the roasted dates powder into the same bowl, Add 1/4
<br /> tsp cardamom powder and 1/4 tsp nutmeg powder. Mix well making sure all the dry fruits are well
<br /> combined. Keep aside.
<br /> Jaggery Syrup: In a pan take jaggery and water. Melt and boil on medium flame till 1 string
<br /> consistency is reached
<br /> Final Making: Pour 1 string jaggery syrup over dry fruit mixture and mix well. Grease hands with
<br /> clarified butter. Make balls when the mixture is still warm.
<br /> 4. Trail Mix/Dried Fruit
<br /> 4.1 Savory Thin Beaten Rice and Nuts Trail Mix
<br /> Ingredients: Thin Beaten Rice, Raw Peanuts, Roasted Bengal Gram, Dried Coconut Chunks,
<br /> cashew, green chillies, salt, powdered sugar, Oil, Mustard Seeds, Cumin Seeds, Curry leaves,
<br /> turmeric and asafoetida
<br /> Method: Dry roast thin Beaten Rice on medium flame and roast it until it turns crisp. Let it cool.
<br /> In a large skillet, heat oil and fry peanuts, cashew, roasted bengal gram and dry coconut until
<br /> golden. Now add mustard seeds, cumin seeds, green chilli, asafoetida and curry leaves. Saute
